Savoury Pancakes: Typical Brittany
Recipe
Ingredients for 6 persons:
250 g of buckwheat flour
1 Egg
Cooking ham
Gruyère Cheese
40 g of melted Butter
50 cl cold water
a pinch of salt
Preparation of a classic Galette complette:
Flour, salt and Egg, stir together.
Gradually add the water and stir until the dough is smooth.
The dough at least two hours in the refrigerator let it rest.
A crepe iron brush with egg yolk or grease. The dough on the pan pour and distribute it at 200 degrees Celsius bake.
When the dough is firm, turn around and with the liquid Butter, then a Fried egg over the Galette beat and let it coagulate. Once the Egg is cooked, the Galette with a little grated Gruyère cheese on top, some slices of boiled ham, add the dough, fold again with salty Butter.
The crepes can also be done with mushrooms in béchamel sauce, with minced meat, sausages or Roquefort cheese, or other garnish according to choice enough.
For the sweet version, one regular wheat flour and the crepe is enough to be used with caramel sauce, chocolate or jam. A flambé version with Grand Marnier is often served as a Dessert.
