Garoupa No Forno: grouper out of the oven

The “Nunes Real Marisqueira” in Lisbon is considered to be one of the best fish restaurants in Portugal. Chef Manuel Costa relies on traditional country kitchen and prepares a “Garoupa no Forno” – grouper out of the oven.

Ingredients for two people:

 

– 300gr of grouper
– 2 potatoes
– 1 red pepper
– 100 gr fresh mushrooms
– 1 onion
– 200 ml. dry white wine
– 200 ml. Water
– 200 ml. Cream
– 2 TSP olive oil
– 30 gr of parsley
– 300 ml. Tomato sauce

 

First Step:
An onion with the olive oil with the addition of the zag perch fry, at the end of the white wine and season to taste.

Second Step:
The fresh tomato sauce and the previously fried potato (the potato into cubes of approximately 3cm x 3cm cut) add.

Third Step:
Simmer for 5 minutes and then place in the oven. The fresh mushrooms and the pepper in small pieces add. In the oven at 220º for 15 minutes.

Fourth Step:
Finally, it is dusted with parsley and ready to serve, Enjoy!
