Georg Matthes bakes Dutch tiger bread

In the Multimedia series “Baking Bread” bakes European correspondent Georg Matthes 28 loaves of bread from 28 countries of the EU and decorates his baking instructions with typical anecdotes. This time: the Dutch tiger bread.

 

Ingredients

  • 600 g wheat flour, type 550
  • 280 ml of water
  • 100 ml of milk
  • 10 g salt
  • 0.8 g of fresh yeast
  • 50 g of peeled hemp seeds
  • 10 g soft Butter

Tiger paste:

  • 10g fresh yeast
  • 70 ml lukewarm water
  • 70 g of rice flour
  • 2 Teaspoons Of Sugar
  • 2 teaspoons Asian sesame oil
  • 1 Pinch Of Salt

Preparation:

  • 1 tablespoon sunflower oil for the bowl
  • a large roasting pan

 

And the tiger bread is made, the Dutch bread with a crisp crust:

  1. The fresh yeast dissolve in the water, then all of the dough ingredients and by Hand mix in.
  2. In a bowl lightly oiled and the dough is around 24 hours. Cover with a lid before drying out protect.
  3. The “No-Knead” dough is not kneaded, but must be folded 2 Times. For the first Time after about 8 hours. The dough of the four sides into the middle fold.

  8. When the bread is gone, it is covered with the Paste. On the baking paper should, if possible, to land little of the Paste, with a brush to help out.
  9. The hot pot from the oven and the bread with the help of the baking paper carefully into the pot. Not the burn your fingers.
  10. The lid on the pot and the tiger bread to bake for 40 minutes. After 20 minutes remove the lid and set temperature to 190 °C lower.
  11. The tiger bread on a wire rack to cool and after one hour of incision. Don’t worry, it stays crispy!
